The organic Lady Cot and Helena varieties from Roussillon (France) are harvested when perfectly ripe, and then gently heated with a pod of Bourbon vanilla. Almond powder, along with whole roasted almonds, are added at a later stage, giving a well-rounded taste and fantastic texture.
